Vegan Protein Caramel Slice

A go to dessert for me! Caramel slice is a great after dinner sweet and this one has the bonus of having a extra serve of protein. Now by no means am I saying don’t eat the traditional caramel slice - I LOVE a good caramel slice, the full sugar, full fat, full EVERYTHING version, but this is a great alternative with a lil-bit less sugar and that extra dose of protein.

Makes 12 slices

Base ingredients:

  • 50g almond meal

  • 50g desiccated coconut

  • 60g vegan vanilla protein powder of choice

  • 2 tbsp sugar-free maple syrup

  • 2 tbsp coconut oil

Caramel ingredients:

  • 1/4 cup almond butter

  • 1/4 sugar-free maple syrup

  • 1/4 cup coconut oil

  • 1 tsp vanilla extract

Chocolate top ingredients:

  • 100g dark chocolate (vegan)

  • 1 tsp coconut oil

Method:

  1. In a bowl, mix together all the base ingredients. Then, line a 6 x 8 inch baking tray with baking paper.

  2. Tip the base mixture into the baking the tray and press down to create a firm base. Refrigerate.

  3. Place the caramel ingredients in a small pot on a low heat. Mix the ingredients together over heat until just combined. If you take the caramel too far it will split or taste burnt.

  4. Pour caramel on top of base and refrigerate for 30 minutes.

  5. Melt the chocolate in a bain-marie over the stove. Once melted, pour on top of caramel and tilt the tray to ensure chocolate evenly covers the caramel layer.

  6. Refrigerate for 4 hours.

  7. To cut the slice, heat a large knife under hot water, dry the knife off and slice through. Repeat this until the slice has all been cut.

  8. Enjoy and keep refrigerated for up to 7 days.
