Sunny egg cups

These baked breakfast egg cups are the perfect way to start the day. They are oozy, energising and full of goodness to keep you and your family fueled for the morning. Eggs are a great food option for breakfast, they are a source of protein and fats as well as choline which plays a roll in memory and cognitive function.

Ingredients:

  • 6 eggs

  • 3 rashers of bacon

  • 30g cheddar cheese, grated

  • 2 slices of wholegrain bread, toasted

  • 1 tbsp chopped parsley

  • Salt and pepper to taste

Method:

  1. Preheat oven to 200C and spray a 6 cup muffin tin with cooking oil.

  2. Cut the toasted bread into thirds and squash a third into each muffin cup.

  3. Slice each piece of bacon into long quarters and use two strips to wrap the edge of the muffin cups.

  4. Evenly divide the grated cheese among the muffin cups and then crack an egg into each one.

  5. Top the eggs with parsley, salt and pepper.

  6. Bake in the oven for 10 - 15 minutes depending on how well cooked you like your eggs.

  7. Enjoy on their own or with a side of wilted spinach for some extra greens!
