Shakshuka for 2

Shakshuka is a great winter warmer. A flavourful breakfast that ticks all the boxes; protein, carbohydrate, fats and a source of vegetables too, what more could you want from a breakfast dish? Plus, this meal goes great as a lunch too!

Ingredients:

  • Extra Virgin Olive Oil

  • 400g tin of chopped tomatoes

  • 1/2 a large red capsicum, diced

  • 1 brown onion, diced

  • 1 1/2 tsp paprika

  • 1/2 tsp cumin

  • 4 - 5 eggs

  • 2 tbsp chopped parsley

  • 1/4 dates, chopped

  • 50g low fast danish feta

  • 4 sliced of wholemeal sourdough or rye, toasted

  • Salt and pepper to taste

Method:

  1. Place a large frypan on medium heat and drizzle with EVOO. Add the onion and capsicum to the pan and saute until the onion is transparent.

  2. Add the paprika and cumin and stir. Pour the tinned tomatoes into the pan and allow to cook until the sauce thicken slightly.

  3. Make wells for each egg and add them to the pan. Cover the pan and allow eggs to cook to your desired consistency.

  4. When the eggs are almost cooked top with the dates, parsley and feta. Remove the pan from the heat.

  5. Serve alongside the toast and enjoy with friends or family!
